1 kg of ripe figs
750 g sugar 75 g
almonds juice of half a lemon
20 g fresh ginger
Place the figs cut in pieces, lemon juice, sugar and grated ginger in a preserving pan.
Boil, stirring constantly. Skim. Cook 30 minutes, turning often. Put in jars and store in a cool dark place.
